Healthy and Easy Recipes

Chocolate Banana Nut Protein Bars (dairy & gluten free)

INGREDIENTS

  • 2.5 ripe bananas (fresh or frozen)

  • 1/3 cup peanut or almond butter

  • 1/3 total, combine pure maple syrup & honey

  • 1 t vanilla

  • 3/4-1 cup almond milk

    DRY INGREDIENTS:

  • 1 t baking powder

  • 1/2 t cinnamon

  • 1 cup protein powder ( plant based: Vega or Vegan Smart)

  • 1 cup gluten free oats

  • 1 cup gluten free baking flour (Red Mill) or almond flour

  • 1/2 cup semi-sweet chocolate chips, stir in at end

  • 1 egg (I recommend, but optional)

DIRECTIONS

  1. In electric mixing bowl, blend ingredients on low speed.

  2. Alternate dry ingredients and almond milk on low speed.

  3. Stir in chocolate chips

  4. Grease 8x12 inch pan

  5. Add mixture

  6. Bake at 375 degrees for about 25-30 minutes.

  7. They will be dense and chewy.

  8. Cool before cutting: 2x4 in slices

  9. Individually wrap and refrigerate (5 days) or freeze
